Mole - A Mexico Treat


This week I served chicken with mole sauce for lunch. Mole (pronounced mo-lay) is a popular dish in Mexico. It comes in many, many varieties, and some versions of it contain 30 ingredients!

Since it can be time-consuming to make from scratch, grocery stores sell the sauce already-made. To buy the kind we wanted, I looked over the bins of mole. Most of it looks like thick, dried mud. I bought a scoop of it (for less than $1) and added chicken broth to thin it.

The kind of mole I purchased was our favorite - mole poblano - which is pictured above. Originally from Puebla, Mexico, this sauce contains hot peppers and chocolate. It is served with sesame seeds as a garnish.

Most visitors to Mexico either fall in love with mole, or have a hard time getting even one spoonful of it down! Fortunately, our family really likes it and enjoyed the treat.
