It's similar to a lemonade stand. People stop their cars or walk up to the green shade. The boys ask how many you're expecting for dinner, and estimate how many tongues you'll need. Last week we had seven people for lunch, so the boys gave us two large tongues.
One of the boys takes the cash. The other one scoops the tongues out of the silver barrel (pictured on the left, below the man in red). He peels off the bumpy skin and chops up the cook meat. Then he packages it. He throws in the needed ingredients for tongue tacos: tortillas, salsa, onion and cilantro.
The meat is tender and juicy. It's so tasty, in fact, that the stand has grown in popularity. The boys sell tongues until they're gone. You have to get to the stand before 11 a.m. if you want tongue for lunch!
